Most of the world's coffee is grown between the Tropic of Cancer and the Tropic of Capricorn.  The quality of this coffee that is grown will depend on 4 different factors: 1) the altitude, 2) the soil content, 3) the moisture, and 4) the temperature.  Beans grown in the best conditions will result in the best eventual cups.

The highest quality coffee is referred to as specialty coffee - which is graded to have less than five defects per a ten ounce sample.  Three examples of specialty coffee would be Gallins Roti (a rich, French Roast blend with sweet notes), Gallins Three Bean Reserve (combining a trifecta of Colombian estate grown coffees), and Gallins Peace Blend.

Other premium coffees would be graded to have less than fifteen defects.  The Gallins Signature Blend, with its delicious ligh body and smooth finish meets the standars of a premium coffee.
